Super quick mutton

Ingredients
Mutton 750 gm
Onion 1 medium
Tomato 1 medium
Garlic 4-5 cloves sliced
Ginger 1 inch sliced
Meat masala 1/2 tsp
Garam masala 1/2 tsp
Cumin seeds 1/2 tsp
Pepper whole 7-8 
Coriander seeds 1 tsp
Chilli pow 1/2 tsp
Turmeric pow 1/4 tsp
Salt

Procedure
- Heat 3 tbsp oil in a pressure cooker
- crush the cumin seeds and whole pepper and coriander seeds then add this to oil
- then add the sliced onion, ginger and garlic
- Just mix all those and to that add the mutton pieces and  all other spices along with chopped tomato and salt
- add little water and pressure cook it till the meat is tender and put the garam masala
-  you can adjust the consistence of gravy by adding water.
- Serve hot with roti/rice.

Dahi kadhi ( Dahi Kanji)

Ingredient
Yougurt 1 cup
Rice flour 2 tbsp
Vegetables 2 cup
(Brinjal,raddish,cauliflower,pumpkin, khada saag danga) cut in to small pieces  
Ghee 2 tsp
Turmeric 1/4 tsp
Salt
Garlic 3-4 cloves(roughly crushed)
Ginger 1/2 inch (crushed)
Red chili whole 2
Pinch of hing
Curry leaves
Panch poran



Procedure
- Boil 1 cup of water by adding some salt and turmeric
- Add the vegetables into the boiling water and cook it till they are 80% done. Make sure they are not mashed.
- In a bowl combine yogurt and rice flour, then add this mixture to the vegetable. Let it cook for another 10 min.
- Now take another pan add some ghee/oil, then hing, panch poran, curry leave.
-Then add the crushed ginger and garlic, fry this for 1-2 min or till the raw flavor goes.
-Add the tadka into vegetables and switch off the flame.

Ghuguni(without onion garlic)

Ingredients
yellow peas 1 cup(soaked for 3-5 hrs)
Potato 1 (small cubes)
1 bay leaf
1/4 tsp jeera
1/4 tsp sugar
Mustard oil 2 tbsp
For the masala paste :
(Ginger (around 1 inch  long)
Cumin seed1/3 tsp
Coriander seed 2 tsp
Little of cinnamon stick
1 red chilli whole)
Procedure
- take mustard oil in a pan, to that add sugar.. Wait till the sugar gets caramelized
- then put cumin seeds and bay leaf
- next add the masala paste
- cook that till oil separates 
- add cut potatoes and cook it till potatoes are 3/4 done
- to that add the boiled peas and required amount of water.. 
- let it cook for 7-10 mins
- add garam masala to it and switch off the flame.

Dahi machha

Ingredients 
fish 6-8 pieces
Yougurt 1/2 cup
Masala paste
(Black Mustard seeds 1 tsp
White mustard seeds 1 tsp
Posto 1 tsp
Coconut pow 1 tsp
Jeera 1/4 tsp
Green chili 1
Garlic pods 2 big or 4 small)
Turmeric pow 1/4 tsp
Mustard oil 2 tbsp
Chopped green chili 1
Chopped tomato 1
Procedure
- Heat mustard oil.. Add the masala paste
- Immediately add fish ,turmeric ,salt, and Yougurt 
- Mix all together.. On top of it put chopped tomatoes and green chilies
- Close the lid and let it cook for 15 min in medium flame 
-Garnish it with some chopped cilantro..
- serve hot with rice






Pumpkin leaf ( kakharu saaga)

Ingredients
Pumpkin greens finely chopped 1 bunch
Pumpkin small cubes 1/4 cup 
Egg plant small cubes 1/4 cup
Ridge guard( janhi) small cubes1/4 cup
Okra thinly sliced 1/4 cup
Milk 1/4 cup
Procedure
- take some water( around 1/2 cup) in a pan and let it boil
-put all the vegetables along with greens in to the boiling water
- sprinkle salt, simmer it and let it cook till the vegetables are nicely cooked
- now roughly mash all those using spatula..
-add some milk to it.. Cook for another 5-7 min
- enjoy it with rice/roti.

Keema masala

Ingredients
Ground meat(any) 2 lb
Onion chopped 2 medium
Ginger garlic paste 1 tbsp
Tomato 1
Yougurt 2 tsp
Turmeric 1/4 tsp
Jeera dhania pow 1/2 tsp
Chilli pow 1/2 tsp
Green chilies 2 chopped
Garam masala pow
Whole garam masalas
Procedure
- heat  oil in a pan
-add the whole garam masalas 
-fry the chopped onions till they are golden brown
- add ginger garlic paste.. And wait 30 sec
- then add all other spices along with tomato except garam masala pow
- cook the masala, then put minced meat
- cook it for 20 mins by adding lil water to it.
- at the end sprinkle some garam masala
and turn off the heat...

Gajar halwa

Ingrediants
Gajar  500g
Sweetened condensed milk(1 14 oz can)
Pinch of salt
Sugar as per ur taste
Ghee (2-3 tbsp)
Milk 1/2 cup
Cardamom pow 1/4 tsp
Procedure
-Shred the gajar.. 
-put ghee to pan add 1-2 pieces of whole cardamom ,
- then the shredded gajar...
 -Fry the gajar till it changes lil color 
-add the milk and salt.
-cover it and cook in mid flame till gajar is well cooked and it become lil dry...
-add the condensed milk and cook it some more with the lid on... 
- in the end add the cardamom pow and ur halwa is ready to serve... 

   

Chicken 65

Ingredients 
Chicken 500 g( boneless)
Chopped ginger and garlic(garlic should be double the amount of ginger)
1 egg
Corn flour(2-4 tsp)
Pepper pow
Cumin and coriander pow
Chilli garlic paste
Green chilli
Cumin seeds
Curry leaves
Red color(optional)
Procedure
marinating the chicken
-Cut the chicken pieces into byte size
-To  the chicken add salt,1/2 of a small lime,corn flour, lil pepper pow , 1 egg
-Then deep fry the chicken pieces and keep it aside.

-take lil oil in a med- high pan, 
-put cumin seeds... Let it splutter then to that add ginger garlic chopped... 
-Wait around 30 sec then put chopper green chilli and curry leaves.
-add coriander cumin pow 1 tsp,lil chili pow,and good amount of chilli garlic paste(approx 3-4 tbsp), 
-then add the food color..
-after cooking all the spices put  around 1/4 cup of water to that... 
-wait till it boil then add the fried chicken pieces and  fry it lil.....
-Serve it with sliced onion and lemon :)

Bhindi tomato khatta

Ingredients 
Bhindi(15-20 mid sized)
Tomato 2 large 
1 small onion
For the masala paste u will need
2 tsp mustard seeds,1 tsp posto,2 pods of garlic,pinch of  cumin seed,1 green chilli.... Grind all the masalas and make fine paste and keep it aside
Preparation 
-Put 2 tsp oil into mid hot pan and fry the cut bhindis( u need to cut that in small pieces).
- After 2-3 min take it out.
-in that same pan take lil oil,add panch phutan then chopped onion. 
-Wait till the onion changes it's color slightly or till it becomes translucent, 
-add the masala paste..
-Cook it for around  3 mins by adding little water as needed.
-add the chopped tomato and cover the lid. 
-Wait till tomatoes are well done now add some water and let this splutter for 2 min.. 
-add the fried okra to it and cook for another 3-4 min.
